The frittatas can certainly be enjoyed right out of the oven as well, and leftovers (if that exists at your house?!) stored for future enjoyment!
I love the simplicity and versatility of this recipe; almost all ingredients included can be substituted with others depending on what's on-hand in your kitchen, various dietary sensitivities or taste preferences. It is also a great baby food recipe for the fall, or any season for that matter, as it leaves room for whatever ingredients are currently in season. If you have a meat-lover amidst your household, this can also be "beefed up" with any meat of choice. Yield: 4 servings Ingredient List (and Tips!)
- 1\2 T oil *choose an oil such as coconut or avocado that will hold up to the high heat of sautéing the veggies
- 1 c grated zucchini *carrot or other on-hand veggies can be substituted
- 1 c chopped broccoli * kale, cauliflower, onion... the sky is the limit on what can be substituted or even added... even bacon!
- 3 eggs
- 1/2 c grated cheddar cheese *again, limitless substitution options from parmesan to sheep's cheese for taste, nutrition, and sensitivities
- 1 T flour *all-purpose, gluten-free mix, almond, or any other favorites 1/2 tsp dried mixed herbs
- A pinch of salt and pepper to bring out flavors
*This recipe can also be multiplied for greater quantities, simply make the necessary adjustments in the baking dish size and bake-time. The time will not need to be multiplied in proportion to the ingredients, but bake only until the frittata is firm in the center.
Speaking of these ingredients, mixing veggies into a delightful blend of texture and taste may allow your child the freedom to enjoy a vegetable that isn't usually a favorite. The more often our family sees and tastes whole, real foods, the more familiar they become! Instructions:
- Preheat your oven to 350ºF
- Grease your Nature’s Little Cube freezer tray
- Heat the oil in a frying pan and add veggies to gently fry for 4-5 minutes, until softened
- While the veggies are simmering, in a separate bowl, mix the eggs, cheese, flour, and herbs
- Add the cooked vegetables to the bowl and stir to thoroughly combine
- Pour this mixture into your freezer food tray and bake for 15 minutes (or until the toothpick inserted in center comes out clean)
- Remove from the oven and allow to cool (unless you are eating right away!)
