Best Breakfast Frittatas

Frittatas are a staple in our house. These frittatas are the perfect make-and-refrigerate or freeze-ahead breakfast that will nourish and satisfy the whole family, from the littlest ones still experimenting with food to the heartiest eater at your table!

Oh, the bliss of enjoying the homemade breakfast without the homemade morning mountain of dishes! Our Nature’s Little Cubes easily store pre-apportioned slices of these scrumptious bites. The frittatas can certainly be enjoyed right out of the oven as well, and leftovers (if that exists at your house?!) stored for future enjoyment!

I love the simplicity and versatility of this recipe; almost all ingredients included can be substituted with others depending on what's on-hand in your kitchen, various dietary sensitivities or taste preferences. It is also a great baby food recipe for the fall, or any season for that matter, as it leaves room for whatever ingredients are currently in season. If you have a meat-lover amidst your household, this can also be "beefed up" with any meat of choice. The ingredients included also tend to be staples around the kitchen, making it quick and simple to put together in a pinch, especially knowing that substitutions and additions are not only allowed but welcomed!

I don't live in your household, but I can only imagine that it somewhat resembles mine. It can be a daunting task to feed your family healthy, nutrient-packed ingredients that leave them full enough to give momma a break between finishing the dishes of one meal and starting the mess of preparations for the next snack! And let's be honest, it's not only our kids who are hungry again – it's us! Especially our nursing momma friends out there!

Another benefit of this recipe is the change of pace from a pureed meal for a little one transitioning to food. This is a dish that the newest eater can manage through self-feeding, which is fantastic pincer and coordination practice, but also frees up the hand that otherwise would have been spoon feeding! A double win!

As you make this recipe more frequently, it becomes quicker and quicker to throw together. And be sure to change it up to avoid recipe burn-out. You could change up this recipe a new way for every day of the week, become a pro at tossing it together, and enjoy delightful breakfasts throughout these chilly fall mornings!

Prep time: Around 10 minutes
Bake time: 15 minutes
Yield: 4 servings Ingredient List (and Tips!)
  • 1\2 T oil *choose an oil such as coconut or avocado that will hold up to the high heat of sautéing the veggies
  • 1 c grated zucchini *carrot or other on-hand veggies can be substituted
  • 1 c chopped broccoli * kale, cauliflower, onion... the sky is the limit on what can be substituted or even added... even bacon!
  • 3 eggs
  • 1/2 c grated cheddar cheese *again, limitless substitution options from parmesan to sheep's cheese for taste, nutrition, and sensitivities
  • 1 T flour *all-purpose, gluten-free mix, almond, or any other favorites 1/2 tsp dried mixed herbs
  • A pinch of salt and pepper to bring out flavors

*This recipe can also be multiplied for greater quantities, simply make the necessary adjustments in the baking dish size and bake-time. The time will not need to be multiplied in proportion to the ingredients, but bake only until the frittata is firm in the center.

Speaking of these ingredients, mixing veggies into a delightful blend of texture and taste may allow your child the freedom to enjoy a vegetable that isn't usually a favorite. The more often our family sees and tastes whole, real foods, the more familiar they become! Don't be discouraged if this masterpiece gets turned away the first time or two – continue offering veggies and other healthy, whole foods and watch the transformation to eagerly gobbling up these and other healthful goodies!


  1. Preheat your oven to 350ºF
  2. Grease your Nature’s Little Cube freezer tray
  3. Heat the oil in a frying pan and add veggies to gently fry for 4-5 minutes, until softened
  4. While the veggies are simmering, in a separate bowl, mix the eggs, cheese, flour, and herbs
  5. Add the cooked vegetables to the bowl and stir to thoroughly combine
  6. Pour this mixture into your freezer food tray and bake for 15 minutes (or until the toothpick inserted in center comes out clean)
  7. Remove from the oven and allow to cool (unless you are eating right away!)
